Ginger candied cranberries

I’ve been experimenting with a lot of new recipes lately so I thought I’d start sharing my results with you.

Today I tried out Howe we live’s Ginger Sugar Cranberries recipe which I found here

The recipe was easy to follow and to make. It was unclear how much ginger to use so we just used 2 large chunks and my husband cut them into slices.

You’re basically just making a simple syrup which soaks over the cranberries. Then the next day you roll them around in sugar. I tried doing a few at a time in all the sugar which was a big mistake. The sugar got all mushy quickly so I set it aside, grabbed a new container and sprinkled the sugar over the berries instead. It did use a lot of extra sugar this way but I set it aside in a stored container in the fridge to use in tea throughout the week. I had planned on making candied ginger soon anyway so I may just reuse the sugar there.

I did save the pieces of ginger and made some candy with it. I also saved the syrup to make drinks with. The cranberries themselves turned out really good. Inexpensive, easy and festive recipe to try out for certain.
